A bit off-topic. This is my first LD compo and since as Hippocrates wrote “When in a state of hunger, one ought not to undertake labor” after sending my “I’m in” post I quickly asked myself: what will I eat during those 48 hours? Then I noticed some of you announcing plans to subsist on snacks and fast foods and got the idea that I could share a recipe that can be made easily, fast and in large quantities and save someone from ramen overdose. So, here goes:
Mexican rice (no, no potatoes)
This is not a traditional dish, but it is very easy to do. You will need a large frying pan or (better) a wok. Cook 2 small bags of rice (about 100g), dice an onion, 2 cloves of garlic and 4 wieners, drain a can of corn and red kidney beans. Heat the pan, add oil, add onion and garlic, wait for them to vitrify, add wieners, wait till they start roasting, add beans and corn, wait till they get warm, add rice. Of course keep stirring it all the time. Then, first add a lot of sweet paprika powder to make the dish red in color, then gradually add hot paprika till you get a proper level of spiciness, add a pinch or two of salt. Voila! I am a rather huge guy and this amount should be enough for two or three lunches, add another bag of rice and two wieners if you are afraid of getting hungry. Serve with ketchup.
